Ingredients

2 C whole-wheat flour
1 1/2 C all-purpose flour
1 C granulated sugar
4 t baking powder
1 t baking soda
1 T ground cinnamon
1 t ground nutmeg
1 t ground ginger
1/4 t salt
1 1/2 C raisins
1 can (14 oz) pumpkin puree
1/2 C vegetable oil
2 C buttermilk or sour milk
3 eggs

Preparation
In a large bowl, combine whole-wheat flour, all-purpose flour, sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, salt and raisins.  In a separate bowl, blend together pumpkin, oil, buttermilk, and eggs. Make a large well in the center of dry ingredients; pour in wet ingredients all at once. Gently fold together until just combined. Spoon batter into muffin tins. Bake in preheated oven for 18 to 22 minutes or until firm to the touch.

A couple of weeks ago, while Mark and I were still running around with our crazy schedules, I decided I would bake us morning muffins. I’ve been getting back into smoothies for breakfast in the morning, but they weren’t enough on their own. I thought that muffins would be great- as they’re quick to grab and take on the go.
